For flyers that don't need folding follow the same steps you do for business cards, postcards and bookmarks.

For 8.5 x 11" Flyer... Bleed size is 8.625 x 11.125"
For 11 x 17" Flyer... Bleed size is 11.125 x 17.125"

When setting up brochures you have to make the front cover panel larger then the remaining panels so it would fold over the other panels. See 8.5 x11" brochure sample images below. Likewise you do the same thing for 8.5 x 14" brochure or tri-folded 11 x 17".
